Jonathan Walko began his career with Ruth’s Chris Steakhouse in 2005 while attending the University of Central Florida in Orlando, where he earned his Bachelor’s Degree in Hospitality Management. He began in front of house operations as a Server Assistant and continued to move throughout the various roles including traveling as a Corporate Trainer. As a trainer, Jonathan assisted in spreading the Ruth’s Chris culture. After several restaurant openings, he began working in the kitchen in Winter Park, FL initially just to continue his knowledge. It was this switch however, that made him realize his passion for cooking and he decided to pursue a career within the kitchen. He became Sous Chef in Ft. Lauderdale in October 2011 and was then promoted to the Executive Chef position in Boca Raton in August 2013.

Tim Gannon, Co-Founder of Outback Steakhouse, Inc. is an extremely successful businessman, great sportsman and a staunch polo sponsor. He is the creator of the “Bloomin’ Onion” recipe, and many of the other dishes on Outback’s menu. An alumnus of Florida State University, he studied art history and dreamed of being a museum curator which took him to Florence, Italy, where he became a tour guide for an art gallery. He then went to Aspen, Colorado where he developed his passion for food and cooking. The French chef at the Four Seasons Hotel had offered to train him to be his assistant. Over the next 14 years he worked at Steak & Ale for Norman Brinker, and then Al Copeland hired Tim to help operate his Copeland’s Cajun Cafe’ in New Orleans. In 1987 Tim sold his saddle for $250.00 and arrived in Tampa with $37.00 in his pocket when Bob Basham and Chris Sullivan asked him to become their partner and launch a new restaurant concept that became known as Outback Steakhouse. In 2012 he started the South Florida Franchise of the new PDQ concept which was founded by his Outback partner, Bob Basham. PDQ (People Dedicated to Quality) is a fast casual restaurant specializing in hand-breaded chicken tenders, hand-tossed salads, sandwiches, fresh cut fries and hand spun milkshakes and malts. PDQ favorites are made with only the finest ingredients, all featuring sauces and dressings homemade everyday. My father, Dr. Bob, owned a 38-foot Nova Scotia Dory fishing boat out of Rock Harbor in Orleans, Cape Cod. He became close friends with the Portuguese fishermen who schooled me in the proper way to prepare the delicacies on my menu. The Portuguese lobster-men claim the Lobster Roll as a Cape Cod original creation, long before it was introduced to Maine (sorry, Maine).
